On this episode of Una Mordida Tacos Tijuana, our host Chef Danny Betancourt went to “Tacos de Birria San Martín” located at Av. San Pedro 5462, Magaña, 22106. On this occasion he tried two tacos: a birria taco priced at $1.4 dollars ($28 pesos) and a quesabirria priced at $1.9 dollars ($38 pesos).
Quesabirria
This taco has beef birria, onion, coriander, red salsa, a cheese crust, and is served on two corn tortillas. When he took his first bite, the ingredient that surprised Chef Danny was the salsa as it was very spicy.
Chef Danny thought that the taco was very dry, though the meat had great flavor, it didn’t have a lot of birria juice. The cheese used did not help it a lot as, since it wasn’t very greasy, created a very flat and hard crust which, alongside the two tortillas, created a dry taco. This is why this taco gets a rating of 6.8.

Birria Taco
This taco has beef birria, onion, cilantro, sauce, and is served on two corn tortillas. One of these tortillas was more fried than the other and before he tried it, Chef Danny decided to add some lemon, as he thought it also looked dry.
When he took his first bite, Chef Danny found out the opposite: it was actually juicier than the previous taco, which confirms that the cheese crust was the ingredient that caused the quesabirria to be dry, making it feel like it had three tortillas. Regarding this taco, he was able to appreciate the meat’s flavor much more, especially because it had less salsa. He realized that it was Jalisco-style birria, which has a more intense flavor and is less greasy. The lemon helped to add the sourness that it needed. Despite this, the taco was still dry, which is why this taco gets a rating of 7.3.
