During these rainy days nothing tastes better than a warm chicken soup, and if it is creamy it's even better. Full of protein and vegetables this cream is a complete meal. Your family will love this simple and delicious soup.

Serves 4

Ingredients:

    1/2 cup butter 2 celery stalks finely chopped 2 carrots finely chopped 1 onion finely chopped 1/3 cup flour 5 cups chicken broth 10 oz. liquid cream 2 cups chopped cooked chicken Salt and white pepper to taste Red bell pepper or finely chopped fresh parsley, for garnish

Preparation:

    Let the butter simmer in a large saucepan with thick base Add the celery, carrot and onion, stir frequently until the ingredients are tender Reduce heat from the pan and add the flour, stir until it forms a golden brown paste Add the chicken and incorporated it into the paste Pour the chicken broth into the saucepan and add salt, stir Add the liquid cream and pepper Let the soup cook for 10 minutes over low heat

Serve the soup into bowls and garnish with parsley or red pepper.
