Baja’s cuisine shines at the Sundance Film Festival

The event took place on Sunday

PARK CITY, UTAH: The third evening of the Sundance Film Festival became a spectacular ChefDance gastronomic event for many guests that were present, in which Tijuana’s chef, Javier Plascencia, was in charge of preparing dinner for that night, and received nothing but positive comments about his kitchen.

Chef Plascencia came to this beautiful city that is surrounded by snowy mountains, and demonstrated to everyone why he is considered one of the top chefs of today by many critics.

In between the film festival activities which started on January 17 and will continue until February 27, the culinary sessions began Friday night with the participation of Chef Whitney Miller, Saturday with Chef Shawn Armstrong, Sunday with the chef Javier Plascencia, Monday with chef Shawn McClain, and on Tuesday with chef Marcel Vigneron which the program will conclude on Wednesday the 23rd with an evening of cocktails.

Distinguished guests enjoyed Sunday’s dinner that began with a dish made with mole colorado (reddish mole), followed by feta cheese with roasted tomatillo sauce, a dish made of huitlacoche (corn smut), and to top it off, a Stage Kiss and capirotada (bread pudding) for dessert.

Javier Plascencia is an icon in the Baja Californian cuisine, with contributions to the art of cooking with local ingredients from the region.

He is also an executive chef and owner of more than half a dozen restaurants in Baja California and Southern California, who is always working to push and promote the new regional cuisine which has placed him in the spot light of the press, and has received great reviews from the critics that have given him the chance to participate in various culinary events, both in Mexico and abroad, alongside of great figures from politics, culture, art, sports and of course other Chefs.

Chef Plascencia has had many achievements that he has shared with other colleagues within and outside Mexico, and has also starred in segments, interviews and reports in major media sources such as The New York Times, Food Arts, The Good Table, Gourmet Magazine, San Diego Home and Garden, Tasters, Food & Wine, New Yorker, GQ Magazine and many others.
