Baja Terra: Tasting and "Barón Balch'é" wine pairing

Tasting offered by Balch'é 2012, a world-class wine

Once the tasting part of the evening was finished, the food pairing began, with four courses, each one paired with their respective wine. The first one was a clam with melted cheese, carrots, zucchini and some chile de árbol salsa and peanuts paired with the Sauvignon Blanc.

The second plate was a beef steak in veal sauce with a marrow, accompanied by vegetables, paired with a Cabernet Franc. An excellent combination.

Afterwards came the dish that, in my opinion, was the best for the night. Grilled duck in raspberry sauce served with a generous portion of polenta. The duck was exquisite, but what really stood out were the flavors born from mixing the polenta with the raspberry sauce and the wine paired with it, creating an incomparable taste, and considering the excellent quality of the Sirah, there's few words that can describe the taste.

Finally, the dessert was a flan with caramelized coffee and an almond biscuit served with ground coffee beans that helped mitigate the array of flavors from the other three courses, accompanied by its own paired wine.
