HUMO: Rustic Cuisine by Giovanni Brassea

One of the best kept secrets in Tijuana

The rise in popularity of foodtrucks keeps rising and rising in Tijuana and Baja California in general. This format gives chefs and culinary creators a whole new way to offer exquisite recipes to consumers with less formality than a sit-down setting, without sacrificing quality. Such is the case with Chef Giovanni Brassea's new project "HUMO".

What HUMO brings to the city are four different sandwiches on ciabatta bread, based on a variety of sausages and smoked pork filling, hence the name "Humo" which translates to smoke.

Chef Giovanni Brassea spoke with us about the concept in a recent interview.

"HUMO is a rustic food cart, centered on sausage and sweet pork. The idea came straight from the heart, and even the cart was built by use. It took us six months to develop the project, and the menu, so that we could deliver something truly unique. It was a lot of work but came naturally with the collaboration of my father and myself, and this is the result", said Chef Brassea.

"I have worked in restaurants for a long time and have realized that a food truck gives you direct contact with peple and we can guage what they like and don't like. To see a smile on a person's face when they like your recipes is priceless."

"The menu devoloped hand-in-hand with the rustic cart, and guided me more than the esthetics. I was also listening to a lot of folk music and midwest music during the process, which is kind of reflected in the food."

Humo has become quite well known through word of mouth, despite having only opened a short while ago. But, it is still one of the city's best kept secrets.
