Slow Burger Celebrates its First Anniversary in Tijuana

It was their turn to innovate and there still among the best

Yesterday, Tijuana's famous"slow food"restaurant celebrated its first year. How, you may ask? Working hard for all they're customers and with some very pleasant surprises!

As usual, they opened their doors at 1 pm, with several people already waiting in line to go in; we were welcomed with a the mythical "Slow Burger", which they told us is always the one they run out of first, given that they only make 10 per day (they make so few due to the fact that they sell them at cost, as a way to show appreciation for their clients).

What makes this burger so special? EVERYTHING! For starters, it has 200 grams of real beef, alongside beets, mascarpone cheese, arugula pesto, basil and house duxel (fine herbs), and if you think that's all, well that's were you're wrong, because they added a special ingredient just to celebrate the anniversary: escargot. The result is an intense combination flavors that mesh perfectly in your mouth and in my personal opinion would go really well with an IPA. Unfortunately, "Slow Burger" doesn't and will never sell alcohol due to its proximity to a school, but at the same time we can't complain about their lemonade with chia seeds and beets, which was an awesome pairing with the food. Also, the onion and potato slices accompanying the food, aren't greasy at all and are absolutely delicious.

We have to point out, that the costumer service is something that is appreciated and recognized in this place. Everyone was so kind, and you can really tell that they love what they do. Talking with Chefs and restaurant partners, Adrian Blumgart and Manuel Cosain, they told us that they do plan on expanding this concept of "slow food" in a near future by opening new locations, but their main location in Zona Rio will stay where it is and open to the public.

Yesterday we got to celebrate with them. We were lucky enough to taste the famous "Slow Burger", and even some cupcakes. We will soon be back to taste the "Caleidoscopio" (100% New York stake, caramelized Portobello mushrooms, Gouda cheese, roasted garlic oil, thyme mayonnaise and mixed lettuces) and the "Crustacea" (100% New York stake, cut up shrimp, Gouda cheese, bacon, candied cherry tomatoes and pepper rainbow mayonnaise) burgers, which were highly recommended and craved. Sounds good, right?

So stop on by, with enough luck you might get the 50th burger of the day. That one is on the house (the give it out daily to commemorate their beginnings, as they would barely sell 50 burgers a day, now it's up to 100). Thanks for everything and let the success continue!
