"Baja Taste", A Documentary Exploring The Region's Cuisine

A feature film that deepens into Baja's culinary offer

Two first generation cinematography graduates from Universidad de las Californias Internacional (UDCI), who decided to merge their thesis with a project, took upon the task of investigating the true essence of Baja's cuisine.

Director Roberto Nájera and producer Adriana Santos question if the concept of 'Baja Med' is truly the region's ultimate cuisine, during their research they realized that Baja in fact does have a wide variety of dishes under its name.

"The premise of this documentary is finding this type of cuisine's identity…which keeps on questioning," commented Adriana Santos during the film presentation, titled Baja Taste. Going through the experience, anecdotes and influences of four world renown chefs, Roberto and Adriana finally started to find an answer.

Javier Plascencia, owner of four different restaurants in the city highlighted the importance of respecting the region's produce as well as making them the main star of any dish, in comparison to other traditional meals from the country where the dish's attractiveness relays on the sauces.

On the other hand, the owner of renown restaurant La Querencia, Miguel Ángel Guerrero is known for preparing dishes with fresh produce obtained thanks to hunting and fishing. He mentioned that while he cooks, he feels an inexplicable passion that has turned into a lifestyle.

This documentary couldn't leave out Valle de Guadalupe where we can find Chef Diego Hernandez. Due to its privileged location, as well as benefiting from the region's freshest products, organic wine is the prime star in his kitchen.

A very interesting twist appears with Oso Campos proposal, who has revolutionized the gourmet meal trend among the streets and is one of the city's food-truck pioneers. Founder and chef of Kokopelli, this chef merges something so common as tacos with a wide range of region's flavors.

All four chefs agreed with the recognition the region's cuisine is obtaining and all of them are confident that there is still much more things to explore. Tourism is an important element for Baja, due to it's climate the state can offer a great selection of products that can only be made on these lands. Surrounded by de Pacific Ocean, Sea of Cortez and a extensive desert, there is no doubt that the possibilities are infinite.
