There's a place in Mexico City that embodies many fresh vegetables in its dishes. Quintonil is run by Chef Jorge Vallejo and his specialty is modern cuisine. The most famous dish of Quintonil is sardines in a green sauce with purslane, fennel, and guacamole; added to that, Vallejo prepares an exquisite and impressive dessert of mamey, caramelized corn crumble, and mamey seed ice cream.

Meanwhile, there's another beautiful place in Mexico City called Biko, and it occupies the 43th place of the list; it describes itself as "surreal Vasco flavour in the heart of Mexico"... which means that the food combines flavours from Spain and Mexico.
Local ingredients and traditional ideas are part of this cooking, which helps create a wider and more contemporary perspective that acts as the perfect drive for Biko. Their most famous dish is Chile en Nogada accompanied with a chunk of deer meat covered in sauces, peanuts and pomegranate.
