Everyday we come across positive comments about Baja California in the local, national and international media. Some are still afraid of crossing the border but others are venturing beyond it. Just the ?Wine Route" in the Guadalupe Valley has become one of the most important touristic routes of Mexico. Not only that, but every day there are new restaurants with a unique culinary offer that crosses borders in cities like Tijuana or Ensenada. Why? The change is people looking to innovate and become a part of the great Mexican traditions extend an invitation to our neighbors north of the border and, why not? The rest of the world, too. We know the current situation is not simple; past not yet forgotten left both tourists and locals with a bitter taste. We?re not trying to ignore the facts but this is the real Baja and, quoting Chef Javier Plascencia: ?We never quit."
