In this episode of Una Mordida Tacos Tijuana, our host, chef Danny Betancourt, visited a food truck called Tacos Javier, which is located on Blvd. Gral. M. Marquez de Leon, Zona Urbana Ro Tijuana; to be more precise, in front of the Costco wholesale market. Two tacos were tried: one was a traditional birria taco, which costs $30 pesos ($1.50 dlls)

Birria Taco (Birria Taco)
This was the first taco presented to our host, which consisted of beef birria, onion, cilantro, and was placed in two crispy corn tortillas. According to the chef, this is a very basic taco that is offered this manner in virtually all establishments. The tortilla is crisp but not toasted, and it can be bitten easily.

The meat is tender and flavorful, with a hint of freshness provided by a portion of onion and coriander. Danny explained that the flavors of the spices and chilies can be appreciated in the birria, in addition to the fact that it is not a flavor that saturates. Another plus is that it does not feel greasy even though the tortillas are bathed in fat from the broth, so this taco had a rating of 8.3.

Unlike the preceding taco, this quesabirria is not prepared in the traditional manner; it contains beef birria, monterrey jack-style cheese, onion, and cilantro, and is served on two golden corn tortillas with a corn toast on top. She confirmed it was the type of cheese she suspected after tasting it, as it adds flavor to the taco.

Danny isn't sure what the tostada's major function is; it might be to eat the remaining meat that falls on the plate or to eat it on top of the mulita-style taco; he attempted the second choice to sample two distinct textures, but it didn't appeal to him, so he stuck with the first. This one received an 8.0 rating.
