Shrimp a la Diabla Taco
The first thing that Danny noticed is that the tortilla was quite crunchy since it was drenched in chili oil. This taco has shrimp, onion, and coriander. The shrimp felt dry because the taco was left to be fried too much time in the griddle.
Danny put the onion and coriander in the taco since most tacos in Ensenada are given only with the protein or meat on the tortilla and the client themselves can put any ingredients or toppings they want. Chef Danny decided to put these two vegetables so as to not alter the taco’s flavor which is why this taco gets a rating of 7.2.

Marlin Stuffed Pepper Taco
This taco has a battered California pepper stuffed with marlin, a bed of paella style rice, cream, and is served on a white corn tortilla. The first thing Chef Danny noticed with his first bite was how soft the pepper’s stuffing was, which confirmed to him that it had been left a long time cooking so it could be this soft.
The cream added a thick, viscous texture which created a good and interesting contrast with the stuffed pepper. The marlin itself was also good, adding an intense fish flavor and this is why this taco gets a rating of 7.9.
