Fifty Chefs Bring Baja California’s Flavors to Life in New Culinary Book

Fifty of Baja California’s most talented chefs share their stories, ingredients, and inspirations in a new book coming this December.

The upcoming release of El Sabor de Baja California promises to captivate readers and food lovers worldwide. This book celebrates the state’s rich culinary landscape through 50 chefs who embody its diversity — from the coast to the desert. More than just a tribute to their talent, it aims to serve as a “tourism treasure,” guiding visitors eager to discover the unique flavors that define Baja California.

During the press conference announcing the project, Chef Ernesto Zamora, founder of Maximiliano Bistro, welcomed guests, media, and the public:

“For us, cuisine is the ultimate language, where we can express every possible feeling. Today, we’re pleased to welcome you with a menu that showcases Baja California — from strawberries and lobster to dates and Real del Castillo cheese — transforming local ingredients into the flavors that define our state.”

Also in attendance was Iván Nolasco, President of CANIRAC Baja California, who highlighted the importance of the editorial project and how it strengthens ties between the gastronomic sector, entrepreneurs, and tourism promotion.

“It’s a very special day. After much work, we can finally announce that the book is ‘in the oven’ — a true compilation of the best of Baja California’s cuisine.”

A Book to Savor the Best of Baja

Federico Hidalgo, representative of CAAS Editorial, shared insight into the book’s creative process. Beyond its written content, El Sabor de Baja California offers an interactive experience with more than 100 QR-linked videos featuring chefs guiding readers through the preparation of various dishes.

“People often know the restaurants but not their soul — where they come from, how they began, and what their culinary philosophy is. We wanted to convey that essence in a book that’s both tangible and digital — a truly phygital experience.”

The official launch of El Sabor de Baja California is set for Wednesday, December 3, when the finished book will finally be presented to the public — ready to share the stories, flavors, and spirit of the region’s vibrant culinary scene.
