As one of the standout activities of Tianguis Turístico 2025, “El Gran Taco de México” brought together the best of Mexican cuisine in one place. On May 1st and 2nd, the Tijuana Cultural Center (CECUT) terrace became a showcase of the culinary diversity that defines the country.
This initiative, promoted by Governor Marina del Pilar Ávila Olmeda, offered free admission to the public and became a space for family gatherings, regional pride, and cultural promotion—proving why the taco is one of the most powerful symbols of Mexican gastronomy.

“El Gran Taco de México didn’t just bring together flavors, but also hearts. Seeing families, chefs, and visitors sharing the best of our traditions shows that diversity strengthens us,” said Governor Marina del Pilar.
Over 5,000 Attendees Recorded on First Day of “El Gran Taco de México”
The governor highlighted that there were more than 5,000 people in attendance on the first day alone—double the estimated daily projection. This success was made possible with the support of Mexico’s Secretariat of Tourism, led by Josefina Rodríguez Zamora, and the backing of Mexico’s President, Claudia Sheinbaum Pardo.

Over these two days, 28 states across Mexico shared their unique ways of making tacos: from Hidalgo’s Toltec-style barbacoa to Quintana Roo’s Caribbean escabeche, along with Sonora’s carne asada, Yucatán’s cochinita pibil, and Baja California’s traditional fish tacos. The variety of ingredients, techniques, and flavors demonstrated that the taco is much more than a dish: it is a bridge between identities.

As a symbol of this unity, a 24-meter-long taco was made, paying tribute to the creativity and generosity of Mexican cuisine. As such, Baja California reaffirmed its role as a national meeting point, where flavor and culture are celebrated in community.
