The Michelin Guide Mexico 2025 began by awarding a coveted stars to Ensenada’s Olivea Farm to Table, a restaurant that places nature at the heart of the dining experience.
Despite being a relatively new establishment, Olivea made its debut in the culinary rankings by winning a Green star—an accolade given to restaurants that stand out for their commitment to sustainability.
Upon receiving this recognition, Chef Lalo Zaragoza stated that maintaining the garden they use to prepare their daily dishes, one of Olivea’s defining features, has been a major challenge.
“To deliver honest cuisine,” he explained, Olivea invites guests on a garden tour, showcasing the origins of their ingredients and the care invested in every plate.
The evening’s biggest surprise came when Zaragoza, reflecting on his vision for Olivea’s future and his pursuit of culinary excellence alongside his peers, was awarded his very first Michelin star.
Lunario Also Wins First Michelin Star
Lunario, located in Valle de Guadalupe, also stood out. After earning a Green star last year and appearing in the recommended list, it reaffirmed its status by securing its first Michelin star.
Chef Sheyla Alvarado accepted the accolade with a moving speech, expressing gratitude to her team and the local community, while inviting guests to explore Baja California’s rich culinary landscape.
Known for its deep commitment to sustainability, Lunario crafts its menu from local, seasonal ingredients grown on its own farm or sourced from small producers, and has been dubbed “the most sustainable restaurant in Latin America.”
The restaurant is also celebrated for its enchanting under-the-stars dining experience, vegetarian-friendly menu, and strong ties to the land.
