Cream of cilantro soup is perfect warm-up

The cold, rainy days are perfect for soup. This one uses a common herb that produces an uncommon taste. The lacy foliage of Coriandrum sativum, known as cilantro, is known to calm nerves, help induce sleep and quench thirst. This recipe, then, is perfect for this season. Its a stress-reliever that will warm you and your family with an extraordinary taste.
Ingredients
4 oz cilantro
8 oz heavy cream
14 oz whole milk
2 TBS of chickenbroth
1 oz garlic
1 oz onion
3 TBS flour
4 oz butter
Preparation
In a blender, mix the cilantro, heavy cream, milk, garlic, onion and chicken broth; and set aside.
In a casserole, melt the butter. Once totally melted, add flour little by little until it is totally mixed and turned into a soft paste, under medium heat. You have to stir in such a way so as to keep the mixture from becoming lumpy.
Once its turned into a paste, add the blended ingredients you set aside, continually stirring to combine everything. Let it come to a gentle boil, continually stirring, so it does not stick. You can garnish it with chopped cashews, if you like.
The result is a succulent, colorful soup thats perfect for wintry day.
