Flautas “El Güero” represent a half a century tradition of Tijuana

Customers helped the recipe improve through all the years.

58.00 MXN costs the order of five flautas at “El Güero”, a white food truck with a Coca Cola sign on the side that carries the history of more than half a century of tradition of a ‘‘Tijuanense’’ dish, one of the favorites of the locals, especially of police officers that pass by it and stop to get lunch. It is one of the obligatory urban gastronomic points at Zona Rio in Tijuana.

The flautas are of decent size, they are stuffed with shredded beef, they are fried and sometimes you can order chicken or potatoes flautas. They are served with shredded lettuce and cabbage, special tomato sauce, cream a cheese.

Diners can add spiciness: jalapeño peppers, toasted red peppers, red onion with yellow serrano peppers covered with “Maguie” sauce. This is to add an acid and spicy mixture to the crunchy flautas that results in a dish Crispy and fresh.

“My dad started selling burritos in the area, when there was only a small river here, there was nothing else and the police asked him for flautas instead of burritos,” said Juan Navarro's sons, the creator of the secret recipe of the famous flautas of the Zona Rio Tijuana.

The Food Truck is located on Calle Río Yaqui. With the works and modifications of land use, the business has changed location on a couple of occasions, but thanks to the customers they managed to keep serving their famous flautas.

The flautas are served from Monday to Saturday from 8 in the morning to 3 in the afternoon.
