Baja California’s culinary scene is built on compelling stories, many of which begin in the kitchens of those devoted to preserving the region’s heritage. Among them is Josefina Sánchez Aguirre, a celebrated traditional cook whose life’s work will take center stage at the State Center for the Arts (CEART) in Playas de Rosarito.

On Friday, November 13, at 5:00 p.m., CEART’s Experimental Forum will host a free public screening of the fourth episode of Cocinando la Baja. Produced by the culinary platform Vagabundeando, the documentary series highlights the individuals who have built their lives around the craft of cooking.

Guests will also enjoy a complimentary tasting of traditional Mexican snacks and drinks.

Josefina Sánchez: Her Story and Family Restaurants

The 25-minute episode offers an intimate look into the life of Josefina Sánchez and her enduring connection to two cornerstone establishments in the region: Hacienda de Badú and Carnitas Los Panchos.

In the film, Josefina reflects on her early passion for food, her formative years in the kitchen, and how she and her sisters have successfully sustained both family businesses across generations.

With Hacienda de Badú marking 35 years of operation and Carnitas Los Panchos approaching its 75th anniversary, both venues stand as vital pillars of Baja California’s culinary history.

Sánchez will appear in person alongside food journalist Oliver Vilchiz, the creator and host of Cocinando la Baja, to discuss the cultural identity, traditions, and passion behind regional Baja California’s cuisine.
