Baja California has cemented its status as a premier taco destination, earning five recommendations in the prestigious MICHELIN Guide, second only to Mexico City among regions with the most recognized taquerías. The state’s taco offerings span a rich variety, from carne asada and barbacoa to fish and shrimp preparations.
State tourism secretary Miguel Ángel Badiola Montaño commended the dedication of local cooks, whose efforts keep alive a preparation that has accompanied Mexicans for centuries. That commitment translates into millions of visitors who refuse to leave Baja California without savoring this iconic dish, driving economic activity and strengthening the entire value chain.
Among the standout establishments is Tijuana’s Tacos El Franc, which secured its MICHELIN nod in 2024. The guide praised not only the flavor of its meats and diverse menu but also the invitingly lively atmosphere, enhanced by “the sound of sizzling and the cutting of the meat.”

Yet it is Ensenada that emerges as the crown jewel of Baja California’s taco scene, claiming four of the state’s five recommendations.
Tacos El Paisa earned its spot through the quality of its ingredients and made-to-order preparation, while Taquería La Principal, nestled in the heart of the Valle de Guadalupe, impressed with “balanced sauces and impeccably fresh toppings.”
In addition, Tacos Mi Ranchito El Fénix and Tacos Marco Antonio both celebrate the port’s maritime bounty, offering specialties such as fish chicharron, tuna machaca, chipotle-cream shrimp, and the iconic battered fish and shrimp tacos known as Ensenada-style.
No conversation about Ensenada’s gastronomy would be complete without mentioning La Cocina de Doña Esthela. Though not a taquería per se, this beloved establishment has also earned MICHELIN recognition for its roasted lamb and birria, best enjoyed with freshly made tortillas.
Nationally, Mexico City leads the ranking with 18 recognized taquerías, followed by Baja California with 5, and Nuevo León in third place with 4.
Baja California’s Commitment to Tradition and Tourism
Baja California’s reputation for flavor and time-honored ingredient combinations is globally acknowledged, and the state’s Secretariat of Tourism maintains ongoing initiatives to promote the quality, hospitality, and tradition of its taquerías.
As part of the strategy championed by Governor Marina del Pilar Avila Olmeda, the goal is to foster “Shared Well-being” by positively impacting every segment of the industry’s value chain.
Notably, during Tianguis Turístico 2025 held at the Baja California Center, the state hosted the inaugural El Gran Taco de México, an event that brought together a representative sampling of taco styles from all 32 Mexican states, alongside the preparation of a monumental 79-feet taco.
