Ensenada fuses local products to create unparalleled dishes: Baja Window to the South

Scott Koenig went to Ensenada to talk with the new president of the National Chamber of the Restaurant and Seasoned Food Industry (CANIRAC) Ensenada, Iván Nolasco, who was a guest in Baja Window to the South to take our host to Ensenada's First Street.

First Street, Calle Primera, or Avenida López Mateos in Ensenada has more than 50 restaurants that have all kinds of different cuisines since one can find everything, ranging from Mexican gastronomy to Italian gastronomy, from French cuisine to restaurants specialized in breakfasts, coffee shops, etc.

On this occasion, they went to La Ensenada, one of Iván restaurants, where he said that Ensenada gastronomy is quite diverse. However, one of his biggest sources of pride for this region is the fusion between the products they get from the ocean in this port along with wines that are made in Valle de Guadalupe. He said that these dishes are a result of the hard work carried out by local producers.

This type of cuisine in the region has become quite famous, making people from other parts of the country want to visit this port due to the fact that it has become a gastronomic destination. In this restaurant, they tried some specialties by La Ensenada: a scallop ceviche, a slice of fresh tuna, both served along with locally made blue and yellow maize, as well some smoked tuna tacos. Nolasco added that one of the things that he likes about Ensenada is that even though some restaurants have similar dishes, every place has its own seasoning and style which gives each meal its own twist.
