Taco with cheese crust with an “exaggerated” taste by “Tacos Obregón” in Tijuana gets a 7.8

Chef Danny also tried a carne asada taco on a flour tortilla

On this episode of Una Mordida Tacos Tijuana, our host Chef Danny Betancourt went to “Tacos Obregón” located at Calz. del Tecnológico, Avenida Universidad & Indeco Universidad. On this occasion, he tried two tacos: a carne asada taco on a flour tortilla priced at $1.76 dollars ($30 pesos) and a “Taco Kostra” priced at $3.52 dollars ($60 pesos).

Taco Kostra

This taco has carne asada, cheese crust, cabbage, green salsa, tomato salsa, and it is served on a homemade flour tortilla. The first thing that stood out about this taco was the cheese crust, which wrapped the meat; the tortilla’s size was small.

When he took his first bite, Chef Danny claimed that it was a taco full of flavor. The cheese crust had an “exaggerated” flavor that completely overwhelmed the meat, to the point that he couldn’t detect the protein’s flavor; he only perceived the tortilla and the cheese. The cabbage was also lost in the taco, as it was cut in small pieces. The salsa surprised our host as it had a very high spiciness level and the tortilla had a very homemade flavor. This is why this taco gets a rating of 7.8.

Carne Asada Taco

This taco has carne asada, cabbage, onion, guacamole, green sauce, tomato sauce, and it is served on a homemade flour tortilla. Something to note about this taco is that the meat was sliced in thick cuts.

When he tried it, Chef Danny claimed that he could perceive that the meat had been drenched in its juices, but it was lacking in flavor. The guacamole lightened up the taco. It wasn’t aguamole (avocado diluted with too much water), but it wasn’t also pure avocado flesh as it was a little bit diluted. The cabbage complemented the taco well, and the combination of the green salsa and tomato sauce created a good contrast. Chef Danny identified both hard and soft meat pieces, due to the order in which they were placed in their container. This is why this taco gets a rating of 7.3.
