A traditional Mexican dish will take center stage in Playas de Rosarito this month as the city prepares for the fourth edition of its Chile en Nogada Tribute Dinner.
Organized by the Rosarito Tourism and Conventions Committee (COTUCO), the event will bring together traditional cook Josefina Sánchez and chef José Sparza for an evening centered on one of Mexico’s most iconic seasonal dishes.
Sánchez said the dish was chosen because of its cultural importance and because it is typically prepared only during a limited period of the year.

An evening centered on Mexican gastronomy
The dinner will also feature cocktails by Mr. T, a wine pairing by Mawi and live music by Agustín Sánchez.
The event is scheduled for August 28 at 7 p.m. at Hacienda Badú. Tickets cost $750 pesos, and organizers say seating is limited.
The dinner is intended to showcase traditional Mexican cuisine while highlighting culinary traditions as part of Baja California’s tourism offering.
More events coming to Rosarito
The Chile en Nogada dinner is part of a broader lineup of events planned for Rosarito during the summer.
COTUCO Rosarito director Saúl Álvarez said upcoming activities will include the Festival del Pescado y el Marisco, as well as an ultralight aviation symposium at the Rosarito Beach Hotel.
