Montevalle has a vegetable patch, which complements the therapies and procedures that are carried out at their facilities. Their goal is to treat the health of your mind, body, and soul, and one of the ways to do this is through food.
In order to get these products, they had the idea of having a vegetable patch, which provides 27 varieties of organic vegetables, which allows Montevalle to prepare healthy dishes, ideal for their guests.
Chef Raúl makes dishes based on seasonal vegetables harvested directly from the vegetable patch. It should be noted that these vegetables are handled organically, as no fertilizers or pesticides are used in the soil or leaves, which are taken care of daily.
Among the vegetables found at this vegetable patch there are tomatoes, cucumbers, carrots, beets, several types of lettuces, broccoli, coriander, zucchini, cabbage, basil, and many more. There are also lemon, lime, peach, orange, grapefruit, and plum trees.
Every ingredient is used for meals, infusions, and mocktails made by Chef Raúl Núñez, who speaks with the gardener in order to know when the vegetables are ready for harvest. The chef made a salad with kale, lettuce, and sauteed beets, a yoghurt and dill dressing, and he added baby spinach, avocado, and hummus.
