"Tacos San Pablito" in Tijuana serves its chorizo taco with delicious handmade corn tortillas

The flavor and texture of the chorizo were complemented well by the other ingredients

On this episode of Una Mordida Tacos Tijuana, our host Chef Danny Betancourt went to "Tacos San Pablito” located at Villafontana, Fontana XIV, 22205. On this occasion, he tried two tacos: an adobada taco priced at $1.25 dollars ($20 pesos) and a chorizo taco priced at $1.62 dollars ($26 pesos).

Adobada Taco

This taco has adobada, onion, cilantro, red salsa, guacamole, and it is served on two store-bought corn tortillas. The first thing to note about this taco is that it was quite hot and that Chef Danny hoped that the salsa was not spicy, because he could see the pepper seeds.

Chef Danny said that the meat's color tricked him since, even though it had a good red hue, it was missing that "push" that adobo flavor requires. The meat was served directly from the spit, which made it softer. It also was thinner. Contrary to what he expected, the salsa was not spicy at all. Due to all these reasons, this taco got a rating of 7.8.

Chorizo Taco

This taco has chorizo, onion, cilantro, guacamole, red salsa, and it is served on two handmade corn tortillas. The first thing that Chef Danny noticed in this taco was that the tortillas were handmade, due to their texture and size. In addition, they were bigger than the ones in the adobada taco.

In the tortilla, he was able to taste that the dough was handled well and that the maize tasted good. The chorizo had a firm consistency and it did not overwhelm the palate. The rest of the ingredients complemented the dish well. This is why this taco gets a rating of 8.3.
