Maciza taco by "The Pig House" in Tijuana gets a rating of 8.1 thanks to its good flavor

There was an ingredient that our host really liked

On this episode of Una Mordida Tacos Tijuana, our host Chef Danny Betancourt went to “The Pig House” located at Campos Deportivos, Otay, 22430. On this occasion he tried two tacos: a maciza taco and a surtida taco, both priced at $1.64 dollars ($28 pesos).

Maciza Taco

This taco has maciza (lean pork), onion, cilantro, avocado, red salsa, green salsa, and it is served on two corn tortillas. Something to note about this taco is that it has a slice of avocado with its skin, so the only thing Chef Danny needed to do was remove the skin and put the flesh in the taco.

The tortilla was medium sized, approximately the size of our host’s hand. When he took his first bite, Chef Danny claimed that the meat had a soft texture; it wasn’t dry or too greasy, and this could be seen from the meat’s color which was a little clearer inside than outside. The tortillas’ flavor was good but subtle, and the avocado slice added creaminess to the taco. This is why it gets a rating of 8.1.

Surtida Taco

This taco has maciza, cueritos (pig skin), buche (pork belly), red sauce, onion, coriander, avocado, and it is served on two corn tortillas. When he tried it, Chef Danny decided to add a few lime drops as he thought the taco was a little salty.

When he tried it, Chef Danny claimed that the lime added the perfect sour touch. The salsa was spicy but passable, so it wasn’t too hot. The meat was cut in small pieces, to the point that they got lost in the taco. However, it had a good texture and an adequate salt level. The tortillas enhanced this dish thanks to the maize flavor. This is why it gets a rating of 7.7.
